Why Freshly Ground Flour (and What You Won’t Find in White Flour)

A grain of cereal is not just starch. A whole grain consists of germ, bran and endosperm. During the production of white flour, the germ and bran are removed – along with many natural nutrients.

What Is Found in the Germ and Bran

They are naturally found in the germ and bran:

  • B-group vitamins (B1, B2, B3, B6, folic acid)
  • vitamin E – a natural antioxidant
  • minerals: magnesium, zinc, iron, phosphorus, potassium
  • fiber
  • essential fatty acids
  • enzymes, which are destroyed by heat and long storage

White flour is largely starch - the leftover grain from which these parts have been removed for durability.

Why Store-Bought Flour Lasts Longer

Whole-grain flour cannot be stored for long because fats in the germ oxidize, the aroma changes and some nutrients degrade. Therefore, the milling industry removes the germ and bran or stabilizes the flour.

What additives are used in flour and bakery products

Industrial flour and baking mixtures may contain:

  • enzymes for consistent dough behavior
  • oxidizing agents (e.g., ascorbic acid) to improve elasticity
  • emulsifiers for softer texture
  • volume, colour and consistency enhancers
  • sugars for rapid fermentation and stabilizers

Bakeries use them for speed, uniformity, and longer shelf life.
Fresh home-milled flour does not need them.

Why Home Milling Makes Sense

  • grinding grain just before use preserves the germ and bran
  • flour has a richer aroma and flavor
  • you know exactly what is in it
  • you grind only what you need

It simply returns flour to its natural state.

The simple truth in conclusion

White flour is stable because a lot of things have been removed from it. Freshly milled flour is „alive“ precisely because everything essential has remained in it.

A grain mill does not perform miracles.
